3 Ingredient Pancakes

Hey All! 

A couple days ago I decided to make a recipe I have seen floating around the internet, and try it out for myself. I was skeptical about it (eggs and bananas? really?) but I've made it a couple times since because I liked it so much. These are dairy and gluten free, so almost any diet is ok to eat them. This recipe is so easy, seriously. Without further ado, here they are!

The blender I use is the Ninja Bullet, it is a knock off of the Vita Mix and I think it is just as good.


Pre and post blend.

 Five minutes later....



You Will Need:
1/2 a teaspoon of baking powder
1 ripe banana
1 egg
(optional) blueberries, maple syrup, nut butter & any other toppings you prefer

1. Peel the banana and crack the egg into the blender, blend for the shortest time possible that allows the banana and egg to combine.

2. Scrape the sides of the blender and mix in the baking powder.

3. Make sure your stove is at medium heat, and pour the batter onto a prepared pan. WARNING: These pancakes are very very thin and flimsy, so when you flip the pancakes don't be alarmed if they are still a bit runny. Flip the pancakes quick.

4. Add whatever toppings you would like! I went for a bit of butter, maple syrup, and LOTS of blueberries.
